There's this food truck in Austin called The Mighty Cone that serves a tortilla in a paper cone filled with fried chicken strips and cole slaw. They fry everything in the same deliciously crispy breading made from what I think is corn flakes, sesame seeds, and almonds. They also have (or at least used to have) the most ah-mazing fried pickles ever because of it.
Couscous with Summer Squash & Roasted Garlic Vinaigrette
I hate raisins. I consider myself pretty open minded when it comes to food, but raisins...guh! They are the one thing that I absolutely refuse to eat. The only exception is pickled golden raisins, but that's because pickles are more awesome than raisins are terrible. The absolute worst is when people sneak raisins into carrot cake. WHYYYY? They don't belong.
Rhubarb Sorbet
It's almost Memorial Day, which means summer is about to get into full swing. Every summer I like to try my hand at making a few different sorbets and ice creams through the months. Some turn out amazing, like the peach ice cream I made last year, some turn out disgusting, like the cherry coconut milk ice cream I failed at making (blech!).
Black Bean Tacos with Corn Salsa
If any of you are from the Austin area and have had Torchy's, you know that they make the best tacos in existence--Trailer Park Trashy? Oh. My. God. So good. Mine and anyone else's will never compare, but I'll keep trying.
I personally think that you can throw anything in a tortilla and it will taste good, so I like to experiment with different ingredients.
